Corn Minestrone: A tasty Mexican tomato soup with vegetables

Ingredients:

½ cup corn kernels

2 mushrooms – finely sliced

¼ cup finely chopped carrots

1 tbsp finely chopped French beans

¼ cup finely chopped potatoes

2 large tomatoes

1 tbsp butter

2 tbsp chopped onions

5 cups water mixed with a seasoning cube

Salt and pepper to taste

Method:

For blenching tomatoes put a cross on the stem end of each tomato. Place it on a microwave proof plate. Microwave it for 2 minutes. Chop them finely after peeling the skin.

Take butter in a big deep microwave proof bowl and microwave it for 30 seconds.

Add onions and microwave for 2 minutes.

Add corn, mushrooms, carrots, French beans and potatoes. 

Mix well with a vegetarian seasoning cube. Microwave covered for 8 minutes. Stir once in between.

Remove from the microwave and mash lightly. Add salt as per taste.

Serve it hot in soup bowls, garnished with grated cheese.
